French 75

The French 75 is just about our favourite Christmas cocktail.  The name comes from WW1 (allegedly) where the French 75 was a piece of field artillery.  The cocktail apparently had a similar explosive effect!

Take a champagne flute, cut a lemon in half and use it to wet the rim of the glass.  Dip the glass in sugar to coat a sugar rim.  Squeeze the lemon into the glass and add a single measure of Durham gin, a bit more if you are feeling adventerous.  Top up with Champagne or Cava.
